Description

Japanese kitchen knife of the Chef or Giotto, from the world-renowned series Kasumi H.M. Suitable for sushi, sashimi and meat. Handmade blade by professionals and by the technology of Japanese swords. The blade is made of three (3) ply laminate with a core of VG10, Japanese high carbon steel designed specifically for knives that retains the cutting edge for the longest time. The VG10 core is laminated on both sides with SUS410 steel using special technology to give the blade the elasticity, durability and aesthetic appearance that only Japanese kitchen knives have. The blade is thermally forged, leaving slight dents against sticking of the products during cutting. The blade is finished with mirror polish. The handle has an ergonomic shape to fit perfectly to the hand, but at the same time not to completely lose the Japanese traditional style. Made of antibacterial material POM with stainless steel divider and the upper part ends with stainless steel guard, two (2) stainless steel rivets further strengthen the handle. The knife is stylish, light and balanced like any original Japanese kitchen knife. World-renowned professionals admit that working with him is a pleasure. Made in Japan
